英國(guó)的典型特色飲食

核心提示:英國(guó)的飲食烹飪,有家庭美肴之稱。英式菜肴的特點(diǎn)是:油少、清淡,調(diào)味時(shí)較少用酒,調(diào)味品大都放在餐臺(tái)上由客人自己選用。烹調(diào)講究鮮嫩,口味清淡 ,選料注重海鮮及各式蔬菜,菜量要求少而精。英式菜肴的烹調(diào)方法多以蒸、煮、燒、熏見長(zhǎng)。從皇家珍饈美味到百姓家常菜點(diǎn)都細(xì)膩精致,頗有貴族風(fēng)格。


The most common and typical foods eaten in Britain include the sandwich, fish and chips, pies like the Cornish pasty, trifle and roasts dinners. Some of our main dishes have strange names like Bubble & Squeak and Toad-in-the-Hole.


英國(guó)典型的全套早餐

1. Roast beef and Yorkshire pudding  烤牛肉配約克郡布丁(被稱作英國(guó)的國(guó)菜)
Yorkshire Pudding is not a dessert in spite of its name, although it is similar in some ways to a pancake made with flour, milk and eggs. It is usually eaten with roast beef and gravy as part of a traditional Sunday lunch.
雖然名字叫約克郡布丁,而且感覺上像是是用面粉、牛奶、雞蛋做出來(lái)的煎餅,但它其實(shí)不是一道甜點(diǎn)。這道菜通常都和烤牛肉、調(diào)味肉汁一起,作為一道傳統(tǒng)的周日午餐。

2. Fish and chips  炸魚薯?xiàng)l(被稱作英國(guó)的國(guó)食)
源于歐洲英倫島裹上美味的漿粉再炸制的方法,食用時(shí)配上香脆的薯?xiàng)l和各種時(shí)令蔬菜沙拉。幾百年前的漁人為了保持從深海中捕撈上來(lái)的野生魚的肉質(zhì)新鮮度,發(fā)明了這種做法。

3. Shepherd's pie  肉餡土豆餡餅
Shepherd's Pie, also known as cottage pie, is a traditional English dish comprising minced (ground) meat covered with mashed potato. The meat is typically lamb or beef left over from a Sunday roast. The term "shepherd's pie" tends to be used when the meat is lamb.
肉餡土豆餡餅是一道傳統(tǒng)英國(guó)菜肴,也叫農(nóng)家餡餅。主要材料是肉丁和土豆泥。通常會(huì)使用周日烤肉剩下的羊牛肉。當(dāng)肉是羊肉時(shí),通常叫做“sheperd’s pie”(注:sheperd是牧羊人的意思)

4. Jellied eels  鱔魚凍


Jellied eelsare eels cooked for approximately half an hour and allowed to cool. The juices then solidify forming the jelly. The dish is an East End of London delicacy, often sold with pie and mash. They are no longer commonly eaten in London, but can still be found, especially around the East End.
鱔魚凍是煮了大概半個(gè)小時(shí)的鱔魚,攤涼,湯就會(huì)凝固起來(lái)變成凍。這道菜是東倫敦的地道小吃,通常和餡餅、土豆泥一起出手,F(xiàn)在的倫敦人不太經(jīng)常吃它,但還是能找到的,尤其是東倫敦。

Trifle is a dish made from thick custard, fruit, sponge cake, fruit juice, and whipped cream. These ingredients are usually arranged in layers with fruit and sponge on the bottom, and custard and cream on top. Some trifles contain a small amount of alcohol such as port or, most commonly, sweet sherry.
水果松糕是由蛋奶沙司、水果、海綿蛋糕、果汁和攪打過(guò)的奶油特制而成。水果和海綿蛋糕放在下層,蛋奶沙司和奶油放在上層。有些水果松糕含有一點(diǎn)點(diǎn)酒精,比如波提葡萄酒,最常見的是加一點(diǎn)甜雪利酒。

Marmite is made from yeast extract, a by-product of beer brewing, and is a sticky, dark brown paste with a distinctive, powerful flavour. The taste of Marmite is comparable in some ways to soy sauce. This distinctive taste is reflected in the British company's marketing slogan: "Love it or hate it."

Mushy peas are dried peas which are first soaked overnight in water, and then simmered with a little sugar and salt until they form a thick green lumpy soup. They are a very traditional northern English accompaniment to fish and chips.
要做豌豆糊,必須先把豌豆置于水中一晚,次日晾干,后與鹽、糖少量燉至綠色濃湯。這是英國(guó)北部常與魚、薯?xiàng)l搭配食用的傳統(tǒng)菜肴。

Black pudding is a sausage made by cooking pig's or cow's blood. It is usually served as part of a traditional full breakfast in England.
血腸是用豬血或牛血灌制而成的,是一種傳統(tǒng)英國(guó)早餐。

10. Toad in the hole  布丁香腸


Toad in the hole is a traditional British dish comprising sausages in Yorkshire pudding batter, usually served with vegetables and gravy. The origin of the name 'Toad-in-the-Hole' is vague. Most suggestions are that the dish's resemblance to a toad sticking its little head out of a hole provide the dish with its somewhat unusual name.
布丁香腸是一道傳統(tǒng)英國(guó)食物。主要材料有香腸和做約克郡布丁用的面糊,通常和蔬菜、肉汁一起食用。這個(gè)名字的來(lái)源并不清楚,流傳最廣的說(shuō)法是這道菜像是一只蟾蜍稍微從洞中探頭出來(lái),于是才有了這個(gè)如此特別的名字。(小編注:這道菜名直譯為洞中蟾)

11. Bangers and mash  肉泥與土豆泥
Bangers and mash is a British colloquial name for sausage (bangers) served with mashed potatoes. The dish is usually served with a rich onion gravy.
肉泥和土豆泥是通俗的說(shuō)法,其實(shí)就是香腸和土豆泥一起吃。這道菜通常都和濃郁的洋蔥肉汁一起食用。

12. Lancashire hotpot  蘭開夏火鍋
Lancashire hotpot is a dish consisting essentially of meat, onion and potatoes left to bake in the oven all day in a heavy pot and on a low heat.


和中國(guó)的火鍋不一樣,這道菜里面主要是羊肉和洋蔥,上面鋪了一層土豆片,然后放在大鍋里一起煮,因?yàn)橹蟮镁茫?所以羊肉吃起來(lái)的口感既軟又多汁。

13. Cornish pasty  康爾瓦郡菜肉烘餅
A Cornish pasty is a baked savoury pastry case traditionally filled with diced meat, sliced potato and onion. Traditionally, pasties have a semicircular shape.
康瓦爾郡菜肉餡餅很可口,通常它是一塊烤成半圓的餡餅,里面會(huì)有肉丁、土豆塊和洋蔥。

Cheddar cheese is a hard, pale yellow to orange, sharp-tasting cheese originally (and still) made in the English village of Cheddar, in Somerset. It is the most popular cheese in the United Kingdom, accounting for just over 50% of the country's annual cheese market.
車達(dá)奶酪很硬,從淡黃色到橙色都有,奶酪味很重,在英國(guó)桑莫塞郡車達(dá)村產(chǎn)出。在英聯(lián)邦,車達(dá)奶酪是最受歡迎的,占有全國(guó)奶酪市場(chǎng)50%的份額。
