丙酸菌對(duì)糖類進(jìn)行無(wú)氧的產(chǎn)生丙酸的發(fā)酵。作為丙酸的產(chǎn)生途徑,認(rèn)為是經(jīng)過(guò)由糖開(kāi)始的艾姆登-邁耶霍夫途徑所產(chǎn)生的丙酮酸,而丙酮酸則有如下的變化:
